Meet the Chefs

Chef Jeana Marie Pecha (@chef_jeanamarie) has been working professionally in kitchens since 2010. She first received public attention at the age of 20 when she appeared on and won Guys Grocery Games, the cooking competition show on The Food Network.

Soon after, Jeana lived in Mexico where she studied the culture, the food, and worked in a fine dining restaurant in Colima. These experiences would go on to inform her cooking and become considerable sources of inspiration later in her career.

After graduating from The Culinary Institute of America at Greystone in 2016, Chef Jeana trained at Archetype Napa, Bottega Napa Valley, and even a short stagiaire period at Alinea Chicago.

In South Pasadena, Chef Jeana opened and managed The Lost Parrot Café where she embraced her love for coastal Mexican cuisine and developed a menu quite unique to the community. She curated and trained the team from scratch and helped solidify The Lost Parrot as one of Los Angeles’ premier brunch locations.

In 2020, Chef Jeana moved to Spokane, Washington and joined the Chad White Hospitality Group where she helped build the James Beard Nominated restaurant Zona Blanca.

Chef Jeana’s next step in her career has brought her back home to the greater Sacramento area, where she is building her dream restaurant Omakase Por Favor. Combining all the experience, knowledge, and love for food that she has acquired over the past 14 years, Chef Jeana will create a unique dining experience featuring fresh ceviches, exciting oysters, and ingredients from local farms to provide unforgettable omakase courses.

Chef Katerina Balagian (@thedolcediva) was born in Yerevan, Armenia and was raised in a family that placed a huge emphasis on eating together and feeding others. Growing up, she fondly remembers the years of having four generations together at the dinner table for every meal.

She has worked in restaurants and bakeries from here to the Bay Area such as La Mediterranee, Katrina Rozelle, Dyafa, Coi, Catta Verdera Country Club and Allora. Katerina has dedicated her career to giving back to her community and has volunteered her time and culinary skills to prepare meals for the unhoused. She is a member of 100+ Women Who Care and Les Dames Escoffier and has also partnered and volunteered with local nonprofits such as CityTeam Oakland, Lean on Me (Sacramento) and YOLO Food Bank, that work on addressing food insecurity, helping to ensure that everyone has access to nutritious meals, among other initiatives.

Taking on the role of Chef de Cuisine at Omakase Por Favor Midtown is Katerina’s way of fully embracing the city that has become her true home. Leading a talented, passionate team in a city that welcomed her so warmly is deeply meaningful. It’s here, in Sacramento, that she’s found the space to grow, create, and push boundaries, and she hopes that their work will inspire the next generation of women chefs to do the same.

Meet the Maître d’

Demetri Gregorakis (@thenewdemgee) is a visionary leader and mentor, recognized for his commitment to building high-performing teams and inspiring future industry leaders. Known for his rigorous standards and people-centered approach, Demetri has spent years mentoring individuals and cultivating environments where staff thrive and careers flourish.

His restaurant journey began in childhood, with a dream of owning a nightclub that would create unforgettable guest experiences through music, lighting, and ambiance. The "curse" of the industry sparked when he was 21, spending the summer at his family’s home in Alonissos, Greece, where while working in the old village of Alonissos’s celebrated eatery “Kastro Estiatorio”, he fell in love with the cliff-side tavernas and bars and the rich experience and hospitality they embodied.

His role as a restaurateur includes owning the acclaimed Blackbird Kitchen, which helped revitalize Sacramento’s downtown with its fine dining and community spirit, and managing The Rind, a beloved wine and cheese bar renowned for its quality and distinctive cheese and wine pairings.

Through projects like the West End Parklet initiative and working with the city to throw innovative parties, activating downtown Sacramento’s “dirty alleys”, Demetri has championed blending community engagement with high-caliber and unique, intentional experiences.

Demetri's latest venture before joining Omakase Por Favor Midtown was the launch of Jayna Gyro, East Sacramento’s first fine-casual Greek concept with a full bar and cocktail program, which he opened as the General Manager in August 2022.

Now, as Maître d' at Omakase Por Favor Midtown, he brings his dedication to guest experience and team development to a globally inspired dining venture, ensuring that every visit feels exceptional.
